Love trying recipes from all over the world? Then really try to make light and fluffy Icelandic Pönnukökur.
It is a perfect treat for breakfast or dessert. These Icelandic specialties have hints of cardamom, nutmeg, and vanilla and can be filled with sweet cream and fruit, or enjoyed alone with a cup of coffee.
The little pancakes do not take a lot of ingredients and are easy to make. They will take you to Iceland right away!
5 eggs
1 ¼ cups flour
1 teaspoon salt
2 ½ cups milk
Butter as needed to coat the pan
You can fill and top up your pönnukökur with almost everything you like, sweet and savory. Our favourites are Icelandic Skyr, berries, whipped cream, jam, powdered sugar, or ham and cheese.
Beat the eggs, milk, and salt together in a bowl for 2 minutes. Slowly whisk in the flour to form a smooth batter.
Heat a nonstick 10-inch pan over medium heat and add butter to coat. Pour 1/3 cup of batter and layer evenly and thinly in the pan.
Cook each pancake approximately 30 seconds on each side until golden brown, flipping once in between.
Fill the pönnukökur with any filling desired or enjoy them topped with butter and a bit of powdered sugar.
